Sodexo is looking for a talented Catering Manager at The University of Southern Maine, to oversee all Catering Operations. The University of Southern Maine is a unique school located on three distinct campuses; Portland, Gorham and Lewiston. In addition to USM, the Catering Manager will have oversight of the University of Maine at Augusta campus. Catering ranges from Everyday Gatherings to upscale Board of Trustee events. Historically, the campus has done hundreds of events with a total revenue of over $1 Million in managed catering volume. This will only continue to grow as the Portland Campus puts the finishing touches on a new 60,000 square foot Campus Center with ample meeting space and resident halls available for summer conferencing.
The ideal candidate will be organized and have the ability to manage logistics of catering remotely all throughout the Southern Maine area. Responsibilities for this role will include VIP catering menu planning, client interaction, presentation skills, food prep, inventory management, purchasing, food & labor costing, scheduling, safety/sanitation & employee training. This position will also have direct customer and client interaction.
Seeking a visionary, innovative leader who has previous Catering management experience who has strong P&L/financial acumen, sustainable dining and culinary understanding. A strong emphasis will be placed on client and customer engagement, strengthening the catering operations and growing the catering department. The successful candidate will have direct impact on all catering operations.
The ideal candidate will have:

  • College/University experience;
  • Strong experience in catering and banquets;
  • Emphasis on food presentation, quality, execution, menu design & implementation;
  • Focus on customer service excellence;
  • Demonstrated experience providing strong leadership, including supervision, direction and training, to a diverse team of employees;
  • Focus on food and physical safety and sanitation;
  • Experience managing food and labor cost controls to meet targets;
  • Understanding of food allergens and special dietary needs;
  • Strong understanding of financials as well as strong analytical skills.
  • Experience with EMS software, Catertrax or other catering software preferred.
    Position Summary:Oversight of catering activities for a medium to large size location/unit with less than $1.5M in managed catering volume. Complex events with a high degree of hands on involvement in catering solutions. Large amount of high profile events. Strong client interaction.
    Key Duties
    • Oversight of Sodexo resources, recipes, systems and use of catering programs to direct daily catering events including; food production, inventory, product deliveries, invoices, and procurement operations.
    • Oversight of the sales process for catering and/or conference services. Works with client and customers to design events.
    • Ensures employees have appropriate equipment, supplies and resources to perform their job, and meet goals, cost controls and deadlines as assigned.
    • Establishes and maintains a safe work environment including both food and physical safety in order to comply with all regulatory and Sodexo standards in various environments. Drives the Zero Harm mindset.
    • Complies with budget requirements by controlling costs (i.e. labor, inventory, equipment, materials) and making adjustments when necessary
    • Supervises employees by delegating, assigning and prioritizing activities, and monitoring operating standards
      Qualifications & Requirements:Basic Education Requirement - Associate's Degree or equivalent experience
      Basic Management Experience - 2 years
      Basic Functional Experience - 1 year work experience in food or culinary services including restaurants, fast food, vending, catering services, institutional services, mall food courts, etc.
